So we’re in week 2 of the Whole30 and life is good because it’s 70+ degrees here and I am not traveling this week! I actually flew back to SF on Monday after working a Sunday in Spokane. It felt weird to be coming home on a Monday versus leaving, but I’ll take it!
My fears about the Whole30 being socially isolating have yet to actually turn into reality. For example, on Friday night me and a bunch of coworkers went to a beer garden (right around the block from my apartment!! <- love love love the new location) and I just abstained from drinking but still got to hang with everyone. On Saturday, I went on a gorgeous hike with some girlfriends, and there was no eating involved. This weekend with Valentine’s Day, instead of going out somewhere, we’re going to cook! Helllllo filet mignon.

BREAKFAST
I woke up and ate half a banana before going on a short run around the neighborhood. Holy hills. I then came home and cooked some eggs with onions and spinach, and ate the rest of the banana and some blueberries. Coffee on the side!
I tried working from the desk in the bedroom today, which I hadn’t done since we moved into the new spot. Much better than working from the couch!
LUNCH
I whipped up an easy lunch of a tuna salad which had onions, celery, lemon juice and mustard and ate it with some plain greens and plaintain chips on the side. This lunch was pretty….dry. The tuna salad definitely could have used a bit of mayo!
So at this point, I had no more meetings in the afternoon, and I figured it was time to go attempt to do some laundry. See, our new apartment does not have a laundry machine so I lugged two big bags of all the laundry we’ve accumulated in two weeks and then parked myself in the laundromat for several hours. First of all, laundromats in SF are EXPENSIVE. Secondly, they are filled with LOTS of hot guys. Thirdly, they are a great, quiet place to do work and even had a standing desk just my size! 2 pros, 1 con.
SNACK
I enjoyed this DELICIOUS pear and some almond butter while waiting for my laundry. I wrapped up work for the day and went to yoga.
DINNER
I had made some chili the day before and we had leftovers. This one had beef, peppers, sweet potatoes, and onions, and the sauce was made with some of Trader Joe’s smoky chipotle salsa, canned diced tomatoes, lots of spices, and a tablespoon of cacao for added richness. We topped it with some avocado, and had some plaintain chips and salad and olives and sauerkraut on the side. I thought it was so, so good but I don’t think Nate is a huge fan of the smoky chipotle flavor. I’m already looking forward to leftovers…we shall have no food waste!
We finished off the night with some raspberries and dried mango. Longer re-cap of how we’re feeling/doing on the Whole30 to come later this week! And of course, everything that we’ve been eating.










Your eggs always look so good and fluffy.
I agree about mustard-only tuna. I think just a little mayo can go a long way!

I always wondered about the laundry mat… good to know if I ever need one! Seems like a food place to work - there’s not really anything else to do so I’d be super-focused.

Plantain chips are such a good snack! I always mash avocado in with my tuna - makes it super moist and tasty without having to add lashings of Mayo (which of course is also delicious!)
I love that smoky chipotle flavour - found a salsa that has it in it and I’m addicted!

omg the laundry….I did it once there too and thought I could get my entire basket dry cleaned for that price anywhere else!

I’m about to start using like the home laundry delivery service people…I can’t imagine it’s any more expensive!
So, Nate is feeling good but a bit “weak” due to the lack of carbs. Kilo of potatoes a day was a good recommendation last week!
try mashing avocado into your tuna! much healthier then mayo but adds that creaminess factor!
