Hi, friends! Happy Wednesday! Wanted to give you a peek into my daily eats as of yesterday and linking up with the rest of the WIAW-ers.. I am up in Spokane this week, so all of my meals were eaten out and I do get the luxury of having lots of options up here! Last time I did a WIAW I was working from home and my meals looked entirely different. Unfortunately you’ll notice that every meal I had was in front of my laptop. I’m going to try and work on that tomorrow.
Kicked off the day with an acai parfait (my new favorite breakfast) from Method Juice company. I asked them to blend additional fresh spinach into the acai puree for a vegetable boost (hence its unappealing greenish color). This one was topped with banana, hemp granola, and peanut butter. It felt like so. much. breakfast and I was stuffed until like 1:30pm. I’m already excited to get another one of these this week! I also made a beeline to Wake Up Call for some absolutely necessary coffee. I was up late working the night before and their drip coffee gave me a great buzz.
Around 1:30 I came up for air after developing powerpoint slide after powerpoint slide. We now are not allowed to eat in the conference rooms of the client site, so I awkwardly sit with the employees in the lunch room with my laptop out. Lunch was awesome! I’ve been all about having little bits of this and that for lunch. Here is about 1/3 of a filet of blackened salmon on top of some romaine, with some locally made “Spicy Pacific Northwest Hummus” (pretty much just normal hummus blended with something spicy) and Mary’s Gone Crackers. Great gluten free find, as recommended by one of my favorite blog readers! I also enjoyed some super crunchy and tangy sauerkraut (gotta get in those probiotics), and more caffeine in tea form.

After a sweaty session on the treadmill, I walked myself to Mizuna, one of my FAVORITE restaurants in Spokane. It was actually started by a fellow food blogger - you can find her at Feasting at Home. They serve fantastic vegetarian and non-vegetarian fare. I opted for the Tofu and Shiitake Mushrooms Lettuce Wraps, which come with a lemongrass-ginger sauce. These usually come with field roast instead of tofu, but turns out field roast is not g-free, which is why I swapped! And I got broccoli rabe on the side, which was sauteed in something awesome that I couldn’t quite identify. I gobbled everything up and worked at the same time.
Ended the night with some unpictured mint dark chocolate and chamomile tea. Plus a long chat with my boyfriend followed by the voice. And because we’re in full disclosure mode, I ended up snacking on a protein bar after tossing and turning for about an hour and a half in my bed - my stomach was making all sorts of crazy noises and my heart was racing. As much as I hate eating at night, it helped quell everything that was going on and I snoozed shortly thereafter.
So that was my eating on Tuesday! I may repeat this exact same meal plan today (when you are reading this post). I’m a creature of habit!













Yum that acai bowl looks delish. I have a very similar hydration station situation at my desk. Water, coffee, Bai, more water. Can’t get thirsty ;P

I need to jump on the acai band wagon. They sound so good!
They are delicious, and supposedly quite healthy although that would seem almost too good to be true..
You did such a great job of eating healthy while you’re traveling! I always end up eating 3 Quest Bars a day and as much V8 as I can find to up my veggie quota!
I’ve done that double protein bar dinner before. It’s not fun!
