Tuesday was a fun and unusual day of work and eats! Instead of working from Olympia or Spokane - we were in the big citayyy of Seattle. I’m excited to share and link up with my fellow bloggers!
BREAKFAST
On my way to LAX with my favorite maniac cab driver (gets me from my folks’ place to the airport in 12 minutes - it’s unheard of) I snacked on a banana. (Sorry Mom - I stole the last one out of the fruit bowl on my way out the door!)
En route on the plane, I had one of the Vega All-in-One meal bars. The nutritional profile is pretty stellar - this bar packs protein, probiotics, Omega-3’s, antioxidants, etc. While I usually make an effort to grab eggs and fruit before I board my early morning flights, that didn’t happen today. When eating a pre-packaged food, I’m trying switch away from processed bars like ThinkThin to bars from brands that are more plant-based and whole-foods oriented, like Vega. I give this bar two thumbs up!
LUNCH
I swung by Whole Foods on my way into the office and stocked up on goodies for the week. I LOVE this “5 for 5” option they had at the WFM in Seattle - you get a scoop of each of these five salads for $5. A totally cost-effective way to eat at WFM!
They gave me enough food to last two lunches (THAT’S $2.50 A LUNCH!!!!), so I ate half and then stored the rest for tomorrow. Each salad was vegan and gluten free. This plate had a quinoa salad with edamame, some kind of black bean/spinach salad, a peanut tofu dish, a spicy cabbage slaw, and a kale tahini salad. Yes yes yes!
SNACK
After seeing this Honey Sunflower Butter on Emily’s blog, I had to try it! With a little gala apple on the side, and some iced tea. I have to say - I’ve experimented with almond butters and other nut butters over the years, but I think PB will always be #1 in my heart. This nut butter really grew on me, though, as I enjoyed my snacktime and watching the ferries go to and fro from Seattle.
We had a team celebration in honor of some promotions at the firm, and the event was at THE SPACE NEEDLE. What a cool way to kick off our week in Seattle! I actually ate dinner in my hotel room before heading over to the event - more deliciousness from Whole Foods Market. This was more kale tahini salad with rosemary roasted sweet potatoes and salmon “candy”.
The event itself was a lot of fun, and it was great to connect with more colleagues. The views were wonderful, of course!
DESSERT
Back in hotel room, I realized I had clocked over 17,000 steps on this rest day - just walking around Seattle, (up and down the aisles of Whole Foods), and to and from the Space Needle. I love having a fitbit!! I then ate a couple of almonds and some squares of Lilly’s stevia-sweetened coconut dark chocolate. You know, to tide me over until breakfast :).
Today we are doing another team event, called Savor Seattle. It’s a culinary walking tour of some of Seattle’s best restaurants. I’m not sure my team could have chosen an event that I could be more excited for. I’ll be sure to document for you all!
