I missed the “What I Ate Wednesday” train last week - probably was a bit thrown off from the long 3-day weekend - but I’m happy to be sharing a day of eats today! Well, it’s officially summertime in San Francisco, which means that it’s our winter here. It’s the most bizarre weather phenomenon.
This is week 3 at my new job, and in consulting terms, I’m “on the bench”. What that means is that you’re not staffed at a client, and you’re focused on doing other kinds of work (proposals, building out research, networking, trainings, etc). It’s been really nice to ease into this new company and culture, but I’m definitely getting excited to start working on a client soon.
BREAKFAST
Alarm went off at 6am, and I was off to teach cycle. I ate a prune before I headed out the door for a little workout fuel. Really fun class this morning - everyone was ready to work hard! Afterwards, I took the pilates class offered right after my cycle one. I’ve never done a back-to-back like that before - it was tough but felt really good! I definitely enjoyed doing the pilates after cycle because I felt warmed up. I ate a banana on the way to the office, and then chowed down on a protein bar and coffee once I settled in.
LUNCH
Ever since I saw one of my colleague’s eating this salad yesterday, I knew I needed to get it ASAP. Heyday’s moroccan chickpea salad is so incredibly delicious, with carrots and raisins and some ancient grains. I got it with their kale salad on the side. They have really nice (read: appropriate) portion sizes. There are a couple of salad places near by that honestly give you enough salad to feed a family for a week! Seriously - they give you your salad in one of those tubs you buy from the grocery store.
I also had some sauerkraut I brought from home, and lots of hot water with lemon. They keep the office space SO COLD.
SNACK
I had a networking meeting, so I grabbed some green tea at Philz. I’m probably the only person that didn’t order coffee there…
I had hard boiled some eggs the night before for snacks throughout the week, and enjoyed two with some strawberries for an afternoon snack. This was such a great snack!! I think because I normally have eggs for breakfast, I forget about having them as a snack but I’m definitely going to do this again. The strawberries were sweet and delicious too.
DINNER
I made these pesto zoodles (per my meal plan) and roasted some salmon. I spiralized two monster zucchini and added a couple of sundried tomatoes to the mix too. I could eat this dish everyday! I guess I did eat it two days in a row. Nate had a work dinner so I entertained myself with all of the TV shows he won’t watch with me (i.e. the Bachelorette) while wearing an outfit that I never let him see me in - it’s an XL t-shirt and loose yoga pants. So comfy though!!
The salmon from Costco is delicious, and really affordable for the amount you get. I also make that pesto in bulk - it’s so easy to defrost and use in all sorts of ways.
I always end the night with some chocolate and tea. There may have been seconds of the chocolate.
Given the early morning wake up, I went to bed early and plan to sleep in as much as possible tomorrow!











That dinner is my dreams!! The salmon looks perfect. My old office was so cold too. I took many trips to the Keurig.

Looks like a solid day of eats- can’t wait to have spiralized zucchini on repeat alllllll summer. PS how do you hard boil your eggs- they look like they turned out perfect!

Ooooh the egg boiling trick is one I discovered recently and it’s awesome. You bring water to a boil, put the eggs in and let them boil for like a minute before turning off the heat. Then you put the lid on and let them steam for like 8 minutes just in the water on the turned off stove. Then I shock them with a bunch of cold water - helps with the peeling. Yum!
oh man my office is always freezing too! I drink lots of hot tea! That dinner looks delicious! Didnt know you were a cycle instructor!

I hateee cold offices so I totally feel you on the tea drinking! It’s cold in Sydney at the moment and our office takes forever to warm up so I spend my day with a heater on my feet and warm cup of tea/coffee/whatever in my hand!

SF does have the craziest weather! My family wanted to come visit over the summer and I’m like…WHY? lol
Also I give you props for cooking dinner! With all of the great food options in the city, I’d probably be eating out every night!
I eat out for lunch often enough that it’s nice to eat dinner at home!!
Ugh cold work environments are the worst!!
I always forget how much I love hard boiled eggs, and I never think to take them as a snack because I think I won’t like them (and will want something sweet instead). But then I have them and realize how good they are. Pairing them with strawberries for something sweet is perfect.

Yeah! I usually like something sweet in the afternoon but the eggs are good for protein and healthy fats too 🙂
