Hi friends! I know I promised a few weeks ago that I would be back on the regular blogging schedule after the holiday break, but I am afraid that I have not held up to that. I bet you’re like, “well, what exactly have you been doing with ALL THAT FREE TIME?” The answer is: work has been kind of nuts, travel for work has been all over the place, and we also have been apartment hunting and started the move into our new place in San Francisco!
But, I do miss blogging although it hasn’t been my #1 priority recently, and I wanted to check in with a WIAW to prove that I’m still alive and eating very well. I definitely kept my holiday attitude about dessert and portion size a little too far into January, but this week has definitely been more back on the normal track, and I have to say, I feel so much better when I eat what I know works for me. Sometimes it amazes me the power food has to truly fuel us, mentally and physically!
To start, check out this gorgeous photo I snapped on the route from Portland to Spokane this week. Our plane got super up close and personal with the mountains/old volcanoes!
BREAKFAST
Woke up and took myself down to the hotel restaurant for a big vegetable omelet, and picked the berries off the fruit bowl. The coffee gave me a GREAT buzz before I went to Spinning at The Union. It was an awesome class! I hadn’t taken someone else’s Spin class since I started teaching again back in November, and it was kind of fun to Spin without shouting into a microphone.
LUNCH
Lunch was my typical lemon juice/tahini rubbed kale salad with tofu. My teammate and I shared some spicy garlic sauerkraut out of a jar, and I ate some of her blueberries. We also chatted about The Bachelor - It’s the first time I’m ever watching the show! It’s a great thing to have in the background at my hotel rooms while I’m working because you can kind of tune in and out. I can’t decide if I love the show or just love to hate it yet.
SNACK
I drank most of a cranberry kombucha, and had an unphotographed green apple and a Justin’s PB packet. Also had a big mug of hot green tea.
DINNER
We had a team dinner at a restaurant I hadn’t been to yet in Spokane, called Manito Taphouse. My team ordered a bunch of appetizers to share, but I only had eyes for the yam chips.
I think I ordered totally incorrectly for a brewery, because I was deeply disappointed with this dish. I had the roasted squash salad with a filet of salmon. The salmon was like rubber, the squash had no flavor, and then it was just a plain big pile o’ lettuce! Even the parmesan was blah.
But, I ate as much of it as I could because it was food and I needed dinner. And then it was off to bed.
I truly am looking forward to being on a more routine blogging schedule. Let me get through this move this weekend, and I’ll definitely have to figure out the best places in our awesome new apartment for taking photos! Also, Nate and I are thinking of doing the Whole30 in January. Yay or nay? It didn’t take much to convince him, to be honest…

I’m glad you are doing well. I totally understand not being able to blog often.
That’s cool that Nate is open to doing the Whole 30. When I mentioned the idea to Terry he was confused to as why in the world it was a thing. Oh well.

Hhahah. Nate grew up with a vegetarian and all sorts of healthy diets, so he’s pretty open to that kind of stuff. He LOVES rice and quinoa, so I think that will be the hardest thing to cut out…
I’ve done that at a steakhouse or brewery before- or a place without veggie friendly options! Luckily Asheville normally has enough good choices!

I’ve done it too many times to count on the road…I just really need to learn my lesson and order the burger!
I took an extended blogging break this month too. I just was not feeling motivated to write.
I’m sorry about your dinner. It is always a bummer to ‘order wrong’ at a restaurant. At least your lunch was delicious!
And I knew that when I woke up, I would have a delicious breakfast!

Haha! Glad I’m not the only one out there! It’s always at breweries…I should just go for the burger.
I get so angry when I get a bad meal out. It’s like a waste of a meal… I could have been eating something delicious!

That’s how I felt!! I was like, I should have ordered the mac n cheese.
I am usually skeptical of seafood and salads in places like breweries, just because you never really know what you’re gonna get. I did a Whole30 last year and thought it went well. I was already eating mostly Paleo but the hardest part for me was completely cutting out alcohol and dessert:)

I eat pretty close to Paleo M-Th, but on the weekends it definitely strays far away from that!

When I looked out the window I almost gasped! I couldn’t believe how close we were.
Ok the picture of the mountain - made my day - so amazing! you are having some pretty decent eats (besides the rubbery salmon -gross) for hotel living. When I was travelling for work I would have to pack healthy foods because most of the time we were only near chain restaurants, blah. I had to laugh when you mentioned taking spin after teaching it, it’s so nice to sometimes have someone tell you what to do instead of always being in charge!! I hope work calms down for you soon!!

I know - I feel lucky that I’ve been able to travel to places that all have Trader Joes or other health groceries and it makes it easy to kind of assemble my own healthier meals!
I sooooo get that life gets in the way! And heck, YOU and your health come first…way before your blog! Love you lady!
