Helllllo from Spokane, Washington! Where it gets dark at 4pm…brutal. Boy do I miss the summers where it was light til 9pm over here! So I’m back on the road again, but my eats don’t look all that different than what I ate working from home last week. Even if I’m traveling, I seem to enjoy the same stuff on the road and at home. Linking up to show my Tuesday meals!
BREAKFAST
I rolled out of bed and made the tough decision of whether I was going to eat from the hotel cafe or bring my breakfast up to my room to eat from my bed. I chose the latter. I grabbed a vegetable omelet downstairs (in my pajamas and boots - no shame) and then went back up to eat it. I had bought some organic berries yesterday to supplement my breakfast, but they had ALREADY gone moldy!! So I went back downstairs to grab some melon. So much for a lazy breakfast in bed!
I then went for a VERY CHILLY walk to The Union, where I took a Spinning class. The teacher rocked and I definitely tried to keep a mental list of some of her songs.
LUNCH
I actually didn’t have to be at my client site until noon (long story, but I have the noon-8pm “shift” this week) so I picked up lunch for myself at the Main Market Co-Op where they had a bunch of kombucha samples. I tried their beet lemon ginger one and it was super tasty! I then grabbed lunch for my team at Anthony’s. I am always the most loved team member when I arrive at noon with a bunch of hot meals.
I picked up a tofu salad and made my own lemon tahini dressing in the kitchen. Definitely am an office spectacle as I massage my kale with lemon juice and tahini.
We also all shared some tortilla chips and some of that Wildbrine probiotic salsa I shared on my Instagram on Monday! Most of my teammates didn’t like it (I actually think one of them called it “disgusting”) but I’m a fan :). It kind of tastes like Mexican-flavored sauerkraut.
SNACK
Around 3pm I ate some Justin’s honey PB straight from the packet with a side of tea. The view outside our office was pretty with all of the fall colors!
DINNER
It got dark so early that I found myself being hungry on the early side, and made my way into the lunch room around 6pm. I had picked up an extra salmon dinner for myself from Anthony’s, so I zapped it in the microwave for dinner along with some frozen veggies. I ate it with some sauerkraut.
DESSERT
So there I am..at the client site until 8pm. So naturally I went for some dark chocolate. Since I’ve been enjoying Dandelion chocolate recently - San Francisco’s ULTIMATE small-batch chocolate brand - I really have turned into a snob that only craves dark dark chocolatey chocolate. So I bought some 85% chocolate hoping it would be just as good, and I enjoyed it.
And then I went home and typed this up for you!










That salmon looks amazing!
I love autumn and winter, but the dark nights are really crazy. It’s almost impossible to photograph things for the blog now.
I KNOW i was just thinking that. It’s like dinner recipes will have to be ready by 3pm!

So I need to vent.
That Justins nut butter- I had one in my travel case, unpacked and was like…oh nice my t-shirt smells like peanut butter….then saw it has ripped open and gone everywhere.
BUT- When I did a shoot the other day, I found peanut butter on my collar. Mid photo shoot snacking? yes.

Oh noooo PB is not the easiest to get out of clothes! And I have no qualms with eating off my shirt. 5 second rule..more like 10 day rule.
YUM!! Your eats look delicious! …and I hear ya on the chocolate!! I’ve def become a “dark chocolate snob!” I used to adore 85% but I reallllllly like salted dark chocolate and the highest I can find (that doesn’t contain milk or soy) is 70% by Theo! …it’s AMAZING and I highly recommend it!!!

I am always so impressed at how you pull together your meals on the road. I’m also so not used to this time change yet… The fact that it’s dark at 4:30 makes me want to eat dinner at 5!

I’m a chocolate snob now too. I tried to enjoy a mini milky way after Halloween for old time’s sake 😉 but it just doesn’t cut it anymore! GIVE ME THE REAL DEAL.

That probiotic salsa looks very interesting, something I might definitely want to find and try! Hopefully I can start to incorporate more probiotics in to my diet by way of fermented food such a great source for them for sure! I can’t believe how much I dislike the taste of sauerkraut though, I tried for like two weeks to really like it trying many assorted brands and tastes and I still just can’t get over how it tastes….

It is a very distinct flavor…there’s no getting around that. It’s very pungent too.

Ugh I know, I HATE how dark it gets now! It was throwing me off all week, since I usually workout somewhere around 4-6, but instead of working out, I wanted to curl up on the couch with a blanket and watch a a movie. On the bright side, the weather being in the 70s here instead of 90s feels nice, so it’s actually like autumn in SoCal now.
