Ok, so maybe the title of this post is a bit of an exaggeration. But for reals, I haven’t had much appetite since we returned on Saturday night for Thanksgiving after a whole week of non-stop AMAZING meals. Maybe my body is in shock since I’m not feeding it dessert with every couple of hours? Regardless, linking up for Tuesday’s eats.
I wish I could say it felt good to return back to my routine in Spokane, but I had such a nice time last week with Nate’s family that my eats on Tuesday felt even more #saddesklunch status than normal! I pretty much gasped when my plane landed on Monday and I looked out the window and saw snow on the ground up here. Time to bust out the flannel tights <— discovery which saved my life.
BREAKFAST
I ate two bites of an apple before going to the hotel gym. I’m staying in a NEW hotel this week that is kind of swanky, and the gym was huge. Fingers crossed I don’t get as bad delayed onset muscle soreness as I did last time I did this leg workout! I could barely hobble around before I took an ibuprofen two weeks ago.
I went to hotel restaurant afterwards and ordered a vegetable omelet which had spinach, onions, mushrooms, and peppers, cooked in a dry pan. They completely over-cooked and browned the eggs - it was a bizarre texture. I still ate the omelet (duh) and the berries off the top of the bowl of fruit on the side.
I ran errands around downtown in the SNOW before grabbing coffee at one of my favorite coffee shops, Boots Bakery. They have an amazing display of vegan/gluten free desserts and prepared foods, if you ever find yourself in Spokane. Normally very tempting, but I definitely overdid it last week if I didn’t even look twice at them.
LUNCH
We were exchanging gifts as part of our team secret “colleague” gift exchange! The rest of my team did potluck style lunch, but I really just wanted my typical kale/tofu salad with tahini and lemon juice, as well as some ‘kraut out of the jar. Two of our team members wanted to share some of their traditional holiday dishes…check out all of those quail eggs.
Is it acceptable to read cookbooks at work?
I totally scored with my secret colleague, who bought me a cookbook and a candle.
SNACK
I had a Quest bar and a large hot green tea. I wear a scarf or a coat even indoors here, so tea is always appreciated in the afternoon in the winter! I’ve realized that I like the Quest flavors that aren’t chocolate. The chocolate ones are too stevia-y.
DINNER
I had the late shift, so I ate dinner at my desk. My team and I had went out to dinner the night before to celebrate my upcoming birthday to Luna - one of my favorite restaurants in Spokane. They way they cook fish is just perfect - the salmon slices away like butter. Anyways, I had this fantastic lacinato kale salad with pistachios and salmon last night. I asked for an extra one to-go since I knew I wouldn’t be able to pick up dinner yesterday, but they ran out of salmon! So I got a chicken breast instead. Definitely over-zapped it in the microwave for dinner…whoops.
Also zapped some organic frozen veggies in the microwave and turned them into an extra rubbery side dish. Meh. Nutrients.

DESSERT
Ok, maybe I lied and I am ready for dessert again. Unpictured dark chocolate to cap off the night! I’ll be honest - dark chocolate doesn’t seem like “dessert” to me. It’s more like my essential vitamins.
And back to my swanky hotel room to snuggle up in three comforters and watch The Voice.

Also, I used to love Questie bars! I stopped eating them because I went dairy free, but in college me and one of my good friends were obsessed! We used to go to our local GNC to load up! I was hooked!

I’ve always wondered if Quest bars were okay as a snack. I feel like every time I see them on someones blog its like before or after a workout - but now that I know you do it, I’m totally jumping on board 😉 xoxo (p.s. stay warm in that Spokane snow… I feel that eastern Washington pain)

They aren’t super filling, but I like that they are high in protein and fiber and are low glycemic too. They definitely don’t taste like a “real food” by any means!

I’ve heard great things about that cookbook - hope it’s a winner! And crossing my fingers that you have minimal soreness in the next couple of days. Or at least that you can move! haha

I think I thought “OMG same” at least 6 times while reading your WIAW. And here’s why. Flannel tights are life, the struggle is real while trying to make microwaved veggies that somehow still taste like the beautiful foodie bloggers’ (but don’t cause they’re rubbery), and yeah dark chocolate hasn’t been dessert for me in awhile lol. Ugh. I hear you on the ZERO APPETITE. I have food poisoning today so the last thing I need right now is FOOD. No food today, just liquids, but they’re not helping and actually making me feel pretty shitty too. Ha!

Blergh to overcooked eggs. But yay to favorite cafes, massaged kale and birthday celebrations! I never thought of having sauerkraut or pistachios with my kale salads, but now I want to try both. Dark chocolate = antioxidants. Antioxidants = daily essentials.

I love Quest bars. I usually have one for breakfast or a late afternoon snack every day. I love their Peanut Butter bars the best - perfect with tea too!
the PB ones are my favorite too! I also like the strawberry cheesecake ones.
I’m not much of a quest bar fan… but the times I ate them they were way better when I microwaved them for 10-20 seconds before I ate them!

Kale and tahini is amazing- it’s my favourite combo… In fact whenever I have kale it’s always with tahini! I would branch out but it’s soooo good!

I’m always happy with candles! I burn through them quickly since I don’t “save” my candles for a special occasion.
