Hello from beautiful Lexington, VA!
But this didn’t happen before we made a quick pit stop to have dinner and drinks with friends in San Francisco. And made another quick pit stop in Charlottesville to catch up with some friends at UVA.
But then we made it! To the beautiful and serene and wonderful Paradox farm. There’s been lots to do - walks up and down the hill, workouts, playing with chickens and PUPPIES, cooking, eating, exploring the hoop houses getting ready for spring vegetables, Nate unpacking his 8-month-abroad life from one backpack, and enjoying time together. We’ve also spent some time with the young couple who are starting to manage the farm and live on one of the properties here. They are doing some really cool things with the local restaurant community and on the farm itself - check out Two Farmers and Jo here.
One of my favorite things about the farm is of course, the food that we get to cook! We eat SO well when we’re here - everything is homemade and there’s no eating out. First of all - don’t you just love farm eggs? I love all of the different sizes. There is nothing compared to farm eggs - I HIGHLY recommend buying pasture raised farm eggs for all of your daily egg use. It’s like a whole different ball game.
On Saturday I made curried ginger squash soup from previously canned vegetables. And of course the ginger was grown on the farm too :). So warm and cozy on the snowy farm! Accompanied by a tuna salad with raisins, apples, red onions and mixed with veganaise.

And oh! There’s nothing like the omelets they make here on the farm. Lots of fresh vegetables cooked up with smoked salmon and farm eggs. For those eating dairy, half of it was topped with cheese. This was a specialty that Nate’s sister whipped up! Nate’s mom’s famous banana french toast with her (homemade) bread, and lots of fresh fruit and preserves made by Nate’s dad. I was in charge of the coffee. I’ve been eating gluten and dairy free recently, as most of you know, and Sunday was one of the first days I woke up with no arthritis pain.
I was in charge of Sunday night dinner so I baked turbo fish (kind of like cod) with fennel, lemon, and spices. I made a quinoa salad with roasted veggies and crushed almonds, based off of February’s most popular recipe. Nate’s sister baked a flourless chocolate tort with a raspberry sauce - this gluten-free gal was a happy camper.

It is so peaceful! And the stars at night are amazing. Very different than my normal LA views, for sure.
