I triumphantly typed that title - WORKING. FROM. HOME. I had no idea how thrilled I was actually going to be knowing that I had a whole month off the road. Linking up to show you today’s eats. For once, they are (mostly) homemade!
BREAKFAST
We had a relatively restless night of sleep with a couple of mosquitos divebombing into our personal space and one of our roommates going for a 4am bike ride. To me, it sounded like he had set up a bike repair shop right outside our door but I’m sure I’m just being dramatic ;). Breakfast was french press coffee from beans that I had brought home from one of my favorite coffee places in Olympia - Batdorf and Bronson. I still haven’t found coffee that I like more than theirs! I also had 3 plain scrambled eggs, made from local eggs bought at the farmer’s market with a bit of Cholula. That’s my favorite go-to hot sauce! And a bowl of blueberries on the side.
LUNCH
After working at my standing desk all morning (read: overturned Costco size box of rolled oats) I was ready for lunch. This has been a favorite lunch recently. Homemade tuna salad made with celery, raisins, vegan mayo, red wine vinegar, lemon juice, and some salt and pepper. Plain kale salad plus some of these super yum three seed sweet potato crackers I picked up at Costco, and a spoonful of Hope Food’s Spicy Avocado Hummus. So many good flavors and textures. Hi slippers and leggings. #workingfromhome SNACK
Major hydration station next to me on the couch while I worked. Water, hot green tea, plus a “cocktail” of a tsp of fermented apple cider vinegar, lemon juice, and water. It tastes like a funky lemonade. Besides being probiotic (make sure you buy the bottle that says “with the mother”), ACV has a ton of detoxifying and anti-microbial health benefits since it’s also a vinegar.
For a real snack, I had a baby-sized gold rush apple and PB. Currently loving the Justin’s brand of PB (who doesn’t?) Still can’t beat this snack combo, in my opinion.
I then ran to Core40 - that pilates studio I had raved about during a previous WIAW. I actually had to run there. Their classes are always at weird times, like “9:20” or “5:40” so when I saw that my class was actually at 5:30 I realized I only had 10 minutes to haul myself there! Thankfully it’s just down one great big hill from my apartment. I left that class DRIPPING in sweat.
While getting ready for dinner, I felt like I needed some recovery protein and ate half of a Quest Pumpkin Pie bar. While I’ve pretty much cut out those bars completely from my diet, I wanted to try their new flavor! Has anyone else tried? It unfortunately has a gross texture-y look to it since it’s “coated” and it’s bright orange. Pretty much looks like the opposite of real food and that’s kind of what it tasted like.
DINNER
I met up with Nate and a mutual girlfriend, Amanda, for dinner at Nopalito! Highly recommend if you’re looking for a more upscale Mexican restaurant in SF. I’ve never been disappointed with their cocktails and they always start your meal with the crispiest roasted (or maybe fried) spicy chickpeas. We all started out with cocktails - I had the Killer Bee which is simple with mezcal, lemon, and honey. Love the smokiness of mezcal!
We shared a salad that had pumpkin seeds, avo, apples, and a jalapeno vinaigrette. Nate and Amanda shared the totopos, we are essentially chips that come already coated in salsa topped with cheese. I snuck in one that was dairy-free.
For my entree, I went with the fish tacos. The fish was so buttery and I love that it comes with a mini side of pickled veggies!

And we did close the meal with dessert. I had a “paleta” (Spanish for popsicle) that was DARK CHOCOLATE CINNAMON VEGAN HEAVEN. Amanda had the rice milk one which actually had rice in it, and Nate went with flan. Let’s just say we took advantage of everything the restaurant had to offer.
