Whole Wheat Apple Harvest Cinnamon Quickbread

Serves: 1 loaf
- DRY
- 2 cups whole wheat flour
- 1 tsp baking powder
- 1 tsp baking soda
- ½ tsp salt
- ½ cup chopped nuts
- 1 tbsp (or more!) cinnamon
- WET
- 2 cups grated apples
- 1 cup unsweetened applesauce
- 1 egg
- 1 tsp vanilla extract
- ⅓ cup maple syrup
- Preheat oven to 350 degrees F
- Mix dry ingredients in a large mixing bowl
- Add in wet ingredients, and mix well
- Spread evenly in a greased loaf pan (I used 9x5)
- Sprinkle a little more cinnamon on top, if desired!
- Bake for 30-45 minutes (or until a toothpick/knife comes out clean)
